Pesto doesn’t have to be green… Turn it red by making it with sun-dried tomatoes instead!

Ingredients

  • 70g 70g Pine Nuts

  • 200g 200g Sun-Dried Tomatoes in Oil

  • 3 3 Garlic Cloves

  • 70g 70g Parmesan Cheese

  • 125ml 125ml Olive Oil

  • Salt

  • Black Pepper

Directions

  • In a dry frying pan, toast the pine nuts until golden and fragrant. You’ll want to do this over a medium heat to avoid burning them. This can turn your pesto bitter.
  • Tip the pine nuts into a food processor alongside the sun-dried tomatoes, cheese, garlic, and a pinch of salt and pepper and blitz until everything is roughly chopped and combined into a loose paste.
  • As you continue to blitz the tomatoes, slowly pour in the olive oil until it becomes the consistency you look for in a pesto. It should be fairly smooth and thick so it coats a spoon.
