Although it is traditionally made with basil, this recipe proves you can make pesto with other herbs and leaves

Ingredients

  • 50 g 50 Pine Nuts

  • 100 g 100 Rocket Leaves

  • 50 g 50 Parmesan Cheese

  • 150 ml 150 Olive Oil

  • 1 1 Garlic Clove

  • Salt

Directions

  • In a dry frying pan, toast the pine nuts for 5 minutes or so until they are golden brown all over then immediately remove them from the heat.
  • Tip the toasted pine nuts into a blender with the rocket, parmesan, olive oil, garlic, and a pinch of salt. Blitz the ingredients until it comes together into a paste.
