Ingredients
50 g 50 Pine Nuts
100 g 100 Rocket Leaves
50 g 50 Parmesan Cheese
150 ml 150 Olive Oil
1 1 Garlic Clove
Salt
Directions
- In a dry frying pan, toast the pine nuts for 5 minutes or so until they are golden brown all over then immediately remove them from the heat.
- Tip the toasted pine nuts into a blender with the rocket, parmesan, olive oil, garlic, and a pinch of salt. Blitz the ingredients until it comes together into a paste.
