Turn a Classic Sweet Strawberry Sauce Into Something Suitable for Grown Ups

Ingredients

  • 500 g 500 Strawberries, Hulled and Halved

  • 50 g 50 Granulated Sugar

  • 15 ml 15 Balsamic Vinegar

  • 5 ml 5 Vanilla Extract

  • Zest of 1 Small Lemon

  • Pinch of Salt

Directions

  • Preheat your oven to 190°C / 375°F.
  • Arrange the halved strawberries in a single layer on a baking sheet lined with parchment paper.
    Sprinkle the granulated sugar, a pinch of sea salt, and lemon zest evenly over the strawberries.
  • Roast the strawberries in the preheated oven for about 20-25 minutes or until they are soft and have released their juices.
  • Once the strawberries are roasted, carefully transfer them and their juices into a blender or food processor. Add the balsamic vinegar and vanilla extract.
  • Blend the mixture until smooth. If you prefer a chunkier sauce, you can pulse the mixture instead to achieve the desired consistency. The other option is to leave a few strawberries to the side, which you can then stir into the blended sauce.
  • Allow the sauce to cool. It will thicken slightly as it cools down.
