  • 2 tbsp 2 Vegetable Oil

  • 1 1 Small Onion, Finely Chopped

  • 2 2 Garlic Cloves, Minced

  • 1 tbsp 1 Fresh Ginger, Grated

  • 1 1 Small Red Chilli, Finely Chopped

  • 200 g 200 Crunchy Peanut Butter

  • 2 tbsp 2 Soy Sauce

  • 1 tbsp 1 Brown Sugar

  • 400 ml 400 Coconut Milk

  • 1 1 Lime, Juice

  • Salt

  • Fresh Coriander, for Garnish

Directions

  • Heat the vegetable oil in a saucepan over medium heat. Add the finely chopped onion and sauté until it is soft and translucent, about 5 minutes.
  • Add the minced garlic, grated ginger, and chopped red chilli (if using) to the saucepan. Sauté for another 1-2 minutes, or until fragrant.
  • Stir in the crunchy peanut butter, ensuring it mixes well with the other ingredients in the pan.
  • Add the soy sauce and brown sugar to the saucepan, stirring well to combine.
  • Pour the coconut milk into the saucepan, mixing well to ensure all ingredients are well combined and the sauce is smooth.
  • Bring the sauce to a gentle simmer and let it cook for about 5 minutes, stirring occasionally, allowing the flavours to meld together.
  • Once the sauce has thickened slightly, remove it from the heat and stir in the lime juice. Taste and adjust the seasoning with salt if needed. Garnish with fresh coriander leaves if desired before serving.
