Perfect served alongside charred vegetables and grilled meat, tzatziki is the ultimate Greek dip

Ingredients

  • 1 1 Cucumber

  • 250 g 250 Greek Yoghurt

  • 2 2 Garlic Cloves

  • 10 10 Mint Leaves

  • Salt

Directions

  • Cut the cucumber in half and then use a teaspoon to scoop out the seeds from the inside. You don’t want to be left with a seedy tzatziki.
  • Coarsely grate the cucumber into a sieve or colander then add a pinch of salt and allow it to release some of its liquid for 5 minutes then squeeze to remove some of the excess liquid. This will intensify the flavour and ensure you’re not left with a watery sauce.
  • Add the cucumber to a new bowl then scoop in the yoghurt and grate in the garlic cloves. Finely chop the mint leaves and add these to the bowl too. Stir to combine all of the ingredients.
  • Give the sauce a quick taste and add salt if it needs further seasoning.
