Ingredients
60 ml 60 Olive Oil
60 ml 60 Water
2 tbsp 2 White Wine or Red Wine Vinegar
4 4 Garlic Cloves
4 4 Plum Tomatoes
3 3 Jalapeno or Green Chillies
2 2 Spring Onions
Handful Handful Fresh Coriander
Salt
Black Pepper
Directions
- Firstly, make the dressing for the rest of the ingredients by combining the olive oil, water, vinegar and a pinch of salt in a bowl. You may want to use a whisk for this.
- Once combined, grate or crush the garlic cloves into the dressing and continue to combine until you have a well-incorporated dressing.
- Now it’s time to prepare the other ingredients. Dice the tomatoes, finely chop the chillies, slice the spring onions and roughly chop the coriander.
- Grab a bowl and add all your chopped ingredients to it, along with a generous pinch of salt and black pepper.
- Tip in the dressing and stir to ensure everything is well mixed before popping it into the fridge for an hour or two, allowing the flavours to develop and mature.
