It’s about time you tried this fiery Chilean salsa you’ve probably never heard of before…

Ingredients

  • 60 ml 60 Olive Oil

  • 60 ml 60 Water

  • 2 tbsp 2 White Wine or Red Wine Vinegar

  • 4 4 Garlic Cloves

  • 4 4 Plum Tomatoes

  • 3 3 Jalapeno or Green Chillies

  • 2 2 Spring Onions

  • Handful Handful Fresh Coriander

  • Salt

  • Black Pepper

Directions

  • Firstly, make the dressing for the rest of the ingredients by combining the olive oil, water, vinegar and a pinch of salt in a bowl. You may want to use a whisk for this.
  • Once combined, grate or crush the garlic cloves into the dressing and continue to combine until you have a well-incorporated dressing.
  • Now it’s time to prepare the other ingredients. Dice the tomatoes, finely chop the chillies, slice the spring onions and roughly chop the coriander.
  • Grab a bowl and add all your chopped ingredients to it, along with a generous pinch of salt and black pepper.
  • Tip in the dressing and stir to ensure everything is well mixed before popping it into the fridge for an hour or two, allowing the flavours to develop and mature.
