Ingredients
2tbsp 2tbsp Neutral Oil
1 1 White Onion
2 2 Garlic Cloves
1 1 Green Chilli
2tsp 2tsp Grated Ginger
1/2tsp 1/2tsp Ground Turmeric
1/4tsp 1/4tsp Ground Cinnamon
4 4 Large, Ripe Bananas
100ml 100ml White Vinegar
2tbsp 2tbsp Honey
1tbsp 1tbsp Tomato Paste or Puree

Directions
- Peel and chop the onion, peel and finely slice the garlic cloves and split the chilli in half, scoop out the seeds and finely slice.
- Add the bananas in chunks in a bowl, then mash roughly with the back of a fork – this is why they must be ripe!
- Place a pan over medium heat and add the oil until hot before adding the onion. You want them to soften, which will take around 5 minutes, before adding garlic, chilli, ginger, turmeric and cinnamon.
- Stir in the mashed bananas, vinegar, honey and tomato paste with a good pinch of salt and bring to a simmer. If there is not enough liquid at this point, add a splash of water.
- Drop the heat down as low as possible, then simmer for 15 minutes, stirring regularly to ensure nothing catches on the bottom of the pan.
- Allow it to cool a little before tipping the contents of the pan into a food process or blender. Blitz until it has come together. If you want it to be a little looser, add a water splash. You’re looking for the consistency of regular ketchup.
